Plain texting goes through the telcos (not pure iMessage, though), so it is subject to capture by the NSA. Signal guarantees encryption from your device to the recipients device, and YOU have to verify the recipient of the messages before sending. Meaning ... Signal messages can't be decrypted by anyone other than your intended recipient.
So your options are to MAYBE have the NSA listen or definitely have a third party listen? I still take my chances. The NSA still needs a warrant to do anything, Signal can just turn your info over without a warrant.
