You are probably thinking, "Shaddup Wonket, you found that on internet, or you made it on internet," but WRONG AGAIN, DINGUS. That was spotted and posted by Wonk pal Chris Davis of the Memphis Flyer , whom we are friends with IRL. It was taken in West Memphis, Arkansas, which is a "suburb" of Memphis, sorta kinda because we who live in Memphis try not to claim it all that much.

I was trained to make stock with mire poix and aromatics. I have moved away from that, and generally just use bones and water. The resulting stock is more flexible. Turkey is a different beastie, however.
