Koloa is the one I've been looking for, but our county's ABC division doesn't stock it, so I'm looking at Muddy River, Belmont Estate, or Blue Chair Bay. Blue Chair Bay seems decently regarded, and because it's Kenny Chesney's brand it should be very widely available I would think (the liquor store is FULL of celebrity tequila brands, por exemplo).
All of those seem to be held in higher regard than Bacardi, and I'm not a coconut rum afficionado but I don't want to ruin a perfectly good cake recipe either. I am a tequila afficionado, so I'm fully into the research but still hobbled by the shitty NC ABC system. May have to drop down to SC if I can't find anything decent.

I guess the takeaway here is that Malibu isn't actually coconut rum, it's a mixture of white rum and coconut liqueur (coconut liqueur with a rum base?). Hopefully your local fellow Canadians have expanded their palates and you can find some proper coconut rum.
Our government run liquor store has Malibu and Bacardi Coconut Rum, that’s it. I will check out the private liquor stores (who have a more eclectic selection) and see what they have when I go to town.
Given that info, I'd get the Bacardi and go make a cake. It's an actual coconut rum, so that's the proper product for the cake.
We only have government liquor stores in our state, so we also have to work within the bounds of "take what we can get", but we're on the edge of a city so the selection is somewhat okay depending on the category.
Now if I can just find some f'ing poppy seed hot dog buns so I can make Chicago-style hot dogs, I'd be doing something.....
During Helena, I lost my car (2002 Buick Century) to flooding. The insurance company gave me $2,700. I paid $2,500 for it 6 years ago. I found a 2002 Buick Century, same color, same interior with 40,000 less miles for $2,600. I'm happy.
So glad it worked out! We lost a Honda Prelude to Harvey, storm surge submerged it. We got a couple of grand from the insurance which helped me snag a 5 speed Cadillac CTS. I drove it for years, it was a fun car with a great ride.

And I would love for him to also face charges and prison time for 01/06/21.

You should try making them yourself. We made sourdough hot dog buns and hamburger buns, WAAY too good.
Malibu is the Ripple of flavored rums. Bacardi coconut rum is full proof (70) and not full of sugar - and it should be readily available.
