I’m guessing that next week’s post will be about the Victoria Sponge, since that’s the quintessential British Royal Dessert (Pudding). If so (or even if not) I’ll leave this story here now because I may be out of town next week.
Several years ago when I was still in the USAF my squadron held a cake raffle, with donated cakes. Mrs. Brit 🦡🍄🐍 made a Victoria Sponge, which is really a very simple dessert once you’ve got the cake right. She included a little note about the history of the cake, so the Yanks knew what they were getting. It then went up for sale alongside MUCH fancier cakes, clearly made and decorated by people for whom it’s a passion. To this day she’s chuffed that her simple cake beat out all the fancy ones for most tickets sold.
