My maple syrup of choice is "grade A dark robust flavor," formerly called "grade B." It has a much stronger (and delicious) maple flavor than regular grade A, so if you use that I think I would put in no more that a tablespoon, maybe less. YMMV.
The pied-à-nuage is around the corner (in country miles, of course) from Roxbury Mountain Maple, which is certified organic and superb. I bought their product for ages at the Union Square Greenmarket in the city, and now I'm their neighbor on weekends.

I made a couple substitutions since I didn't have all the ingredients on hand.
Instead of Maker's Mark, I used Bacardi 151.
I was out of bacon, but I had some tasty Salami chunks.
For a touch of sweetness I tossed in some Splenda.
Toss 4 ounces salami in a skillet to carmelize. Once the pan is very hot, throw in 16 ounces of 151. Light the 151 on fire. Sprinkle Splenda over the flames for a pretty fireworks effect.
Remove from stove to cool. While your masterpiece is cooling, pop open your favorite ice cold Mexican lager. Put on some good tunes and relax.

A warmer climate immediately reduces the sugar content in the sap, so they have to tap more and boil more to produce what they'd get naturally in an ideal habitat.
Always go for Vermont and Quebec as they have a strict grading system, which is why the syrup they produce is renowned for its quality. You can count on it being rich, smooth - and above all - have a consistent taste. No nasty surprises. Whereas Ohio? Not so much.
Even before the climate shift, Ohio already had a lot of climate and soil variation, in addition to a lot more tree varieties of sugar maples, all across the state. Now figure that every 900 or so of those Ohio producers is gonna do things their own way because no one's the boss of them, and do the math. If you're looking for consistency, you're not gonna find it here.
Just to put things in perspective: due to decreased syrup yields, Vermont buys a lot of Ohio's syrup to turn it into maple sugar candies and flavoring and whatnot - it's used for anything but syrup.

When I test drove my renewed passport in 2016 it took 90 minutes to clear Canadian Immigration in an obviously stripped down work truck. And a five point inspection (at least one dog) to reenter US the next day. I don't drive a 3/4 ton truck now, but I would probably need to budget more time for crossings. I'm starting the renewal process shortly, and I'll probably find another excuse for an excursion.
We plan to spend it working in our garden. Hubs and I have been neglecting things because we are both freaked out and depressed. After I leave here today I will not look at the "news" again.

But yeah, it's a really hard thing: to go into a stranger's house in the middle of the night, and assess that he is actively dying. He was still quite lucid, even making little jokes. He passed this morning about 6 am
When my sister was at the end of Parkinson's a couple years ago they brought hospice in. My niece did a lot or research and they realized that Medicare paid for it. She lasted almost 6 months. The last week was terrible. Her hospice team were angels.
The vast majority of my patients are on Medicare. Yes, that gives me nightmares these days. End of life is incredibly unpredictable, the more of it I see, the more I believe that. A person can slip gently away just after you saw them, or they can linger for longer than even a Hospice nurse would imagine possible.

good point. We will have to come up with new strategies. For example we are not going to counter the ICE goons hand to hand, but perhaps we can figure out how to dox and compile data on individuals. The have to drive to the locations - you can start to identify vehicles, confederates, clothing, actions. If the police and FBI are not going to do this then we will have to. We want then to eventually face consequences.
Even if we manage to rid ourselves of this shit by legal and peaceful means such as elections, and I have doubts about that. We can’t just shrug and go back to “normal” like we tried to do last time; it didn’t work and it won’t work, shit will have to change and uncomfortable things will have to be faced.

But yeah, it's a really hard thing: to go into a stranger's house in the middle of the night, and assess that he is actively dying. He was still quite lucid, even making little jokes. I asked him whether he wanted to hear my assessment, and he said yes. I told them what I was seeing, and that my best educated guess was that he might not see the morning. I told them a little about what to expect, and how to keep him comfortable. My fear was, that I had assessed wrong, and given them all this heavy stress, and that he would go on living for days, weeks, longer. My assessments are usually right in this kind of case. He passed this morning about 6 am
It takes a particular kind of soul plus skill to be fully present for someone like that. I am so glad you're doing what you do.
When my sister was at the end of Parkinson's a couple years ago they brought hospice in. My niece did a lot or research and they realized that Medicare paid for it. She lasted almost 6 months. The last week was terrible. Her hospice team were angels.
The vast majority of my patients are on Medicare. Yes, that gives me nightmares these days. End of life is incredibly unpredictable, the more of it I see, the more I believe that. A person can slip gently away just after you saw them, or they can linger for longer than even a Hospice nurse would imagine possible.
