Which kind of pancakes? There are as many different types of pancakes as there are countries. Some even put baking powder in them!

In my eyes, the only good pancakes are made with flour, milk, eggs, and a pinch of salt. Baked in a pan with actual butter, dammit! anything else is an abomination. (Cleared butter is fine, faux butter is completely unacceptable, and certain oils are tolerable. No olive oil though!)You want thinner pancakes? Add more milk. You want thicker pancakes? Less milk. You want them fluffier? More eggs and whisk harder.

Baking powder tastes disgusting and should only be added to things with overpowering flavour profiles, not something as delicate as a pancake. If a plain pancake doesn't taste good, then you're just adding bacon and syrup to hide your crime.
