Diners, greasy and non-greasy alike, need employees, customers, vendors, service people, creditors, and a working relationship with government authorities ( health dept, fire, public safety, tax collection, etc.).I agree with your premise but this is beyond his ability.
Yes, you are correct, that was horrible, but I think for the most part he did much better than I had hoped for.
