Back in the '70's, all of us dishwashers were hitting the weed. I was just happy getting a pittance for getting out of the house.

Back when I was involved in food service, the owners and managers were mostly doing the staff.

When I was a professional doorman that discussion was sort of relevant, because we are part of the service. But cooks? Nah, fuck em.

Some young people told me about owners taking waiters' tips and I thought that was so wrong so I tried to have cash with me for tips and I'd put it under a plate and point it out and say "that's yours." Every time they'd say "Oh, no that's ok," or something implying they knew what I meant but, no. I got the impression it was out of their control. How can the owners do that when they know the pay is set at starvation level with a certain understanding about the tips?

Heywaitaminute--that image is from the WWII propaganda cartoon, The Spirit of '43, where Disney gave an excellent rationale for "everyone needs to pay your fucking taxes assholes so we can win this fucking war!" It's premised on FDR's concept of the Arsenal for Democracy. Little bit of period racist depictions of Japanese ships with slanted eyes, but still good.

What a coinkidink. Mrs. H., a graduate of the Culinary Institute of America, had her best restaurant gig go up the noses of the absentee owners. She tried to make the cooking thing work one more time for a gig at a big retirement home, but that went to shit as well. Fortunately she had the guts to give up and follow in the footsteps of her mom and her BFF in to the civil service, where she had the opportunity instead of making someone a really good cheeseburger to making disadvantaged people's lives better. All that, and because we live in a prosperous state where people want to live, she will get a decent pension when she retires - certainly not as good as her mother, nor as good as her BFF who went to work for the department directly out of college, but it should be enough to pay our cat food bill for the a few years after we stop working.
