Yummy! This year I didn't grow tomatoes, but next year I'm going to look forward to those end-of-season fruits.

Also, in regards to the oil disposal thing, if you haven't burned it by cooking too high for the oil type, you can usually strain and reuse frying oil. After the whole shebang (pan + oil + cooktop) cools, I use a fine-mesh metal strainer (a chinois) to filter out the food bits and then put the cooled oil in a glass jar with a tight-fitting lid and refrigerate. Maybe I add a bit of fresh oil for the next fry, and I can get about 3 uses out of a batch of oil.
