Ecuador is already a US client state... with a president born in Miami, and whose family is heavily in the cocaine trade. Why would the US be interested in "regime change" there?

They couldn't care less about the safety of citizens or especially diplomats. Frankly, it would not surprise me if they aren't hoping for hostages or civilian deaths so they can condemn Iran and further escalate this totally-not-a-war.
