Let me explain it to you: Pronouns are like names. You use both pronouns and names to refer to someone. If a stranger walks up to you and says "Hi I am Bob", the proper response is "Hi Bob, I am Jim." right? That's because they introduced themselves as Bob. If you respond "Hi Robert, I am Jim" you're being slightly impolite by making assumptions about their name and using a different version than they introduced themselves with.
Pronouns are no different, they're something you can choose to include when you introduce yourself and have a reasonable expectation that people will use those ways of referring to you. They're not mandatory, just like you don't have to tell someone your name. You can hear "Hi, I am your waiter this evening, what can I get you?" and that would be just fine. Or you can use your title and last name: "Hello, I am Doctor Smith." You can mix and match all these options (title, first name, last name, nick name, and yes even pronouns or the type of relationship you have ("Hi neighbour!").
The purpose of an introduction is to inform the other how you want to be addressed. Yes, some people get weird about it, but them telling you about it during their introduction saves you the time you would otherwise waste on getting to know them. They're basically giving you the earliest possible chance to refuse to interact with them, which is nice of them.

However, I applaud them for being able to see that love truly conquers all and a life lived embracing differences, learning respect for others and being an advocate is a far more enjoyable and rewarding as well as a much more enriching life.
