I'm unsurprised. When the ex and I visited CA for a wedding, I wanted to go to the Renzo Piano-designed CA Academy of Science and to eat at Cafe Gratitude. I did. The ex's kids went to In N Out.
I live in So Cal (sort of) . InandOut has lousy food, The meat in the burgers is very thiin and in no way comparable to Denny's or Wendy;s.. It't a cult thing.
In N Out has okay burgers for the price, but there are other chain burgers that are better (The Habit, Doghaus). If you order their fries well done, they don't suck quite as much. Their milkshakes suck as well.
While I believe your explanation to a point, I've been to places that cook fries from fresh potatoes, and they can be good. The difference is probably quality and variety of potato and proper frying technique.
I grew up in Pasadena, home of the original In-N-Out, which was a bare bones drive-thru... and killer! Especially for late-night wasted teenagers. Especially if your friend Stewie works there (RIP Stewie, the greatest drummer around Pasadena/Altadena/Sierra Madre/etc. of the middle-late 70s! Van Halen coulda had you and been even better).
Now that the time machine is broken and I can't be there any more, In-N-Out sucks more or less as bad as anything else. I'm no authority; I almost never eat fast "food" of any sort, but I have young adult kids so the debate is still part of my life's background noise. The few times I've been there (in CA) over the last 10 years: feh. I think I don't need to try McD, Burger King, Wendy's, etc... could they really be better? C'mon, it's all crap. We're talkin' shades of crap here. Others have said it's a cult thing. But not even that! It's people feeling cool for going with the "edgy" brand. Like Chevy truck drivers with a "Chevy Mulisha" sticker, or even better, a cartoon of Calvin pissing on the Ford logo.
FFS, if you want something good to eat, go get it. Stay away from those slag heaps. Best case, shit-burger. Worst case, Pence cooties.
