Is canned <a href="http:\/\/www.amazon.com\/Allens-Popeye-Spinach-13-5000-Ounce-Pack\/dp\/B0047NSHBK" target="_blank">spinach</a> OK? If so, can I open it with a can opener or do I have to squeeze it out wit' me fist?

Google turns up recipes using kale - if you buy fresh it'll need to be boiled a few minutes to soften it up, the pleasure in spanakopita is definitely in large part the textural experience of crunching through the phyllo into the wam moist softness of the filling.
