Is canned spinach OK? If so, can I open it with a can opener or do I have to squeeze it out wit' me fist?
Great, now I have to wipe drool off my keyboard; and worse, my lunch break isn't for two more hours. Thanks, mojopo.
No, really, thanks! I can't wait to make this. Lemon potatoes recipe, yes please. Hope it's loaded with garlic! (I usually make roasted rosemary-garlic potatoes, myself.)
Google turns up recipes using kale - if you buy fresh it'll need to be boiled a few minutes to soften it up, the pleasure in spanakopita is definitely in large part the textural experience of crunching through the phyllo into the wam moist softness of the filling.

Those freeze uncooked really well- then take them out and pop them into the oven before your party, hey presto!
"breaking away from the jar of bacon grease in my mother’s kitchen." you say that as if it's a problem....
