It happened after people were working there and had given up their previous jobs. It sounds like it was not part of the original job offer and was coerced for any who was not a multimillionaire ex-CEO and could afford to simply walk out.
I'm not a law-talkin' guy either, but I don't see why 2 people can't have an NDA, I have been involved in many NDAs between 2 companies and as we all know "Companies are people too, my friend". In fact, I have signed an NDA when I interviewed for a job.
In both cases, the NDA was limited to specific products in development or specific technical details of products and they expired when the product or detail became public. I was still free to talk smack about the company if I wanted to.
In this case, it is a condition of employment introduced after the job had been accepted. For the people who had already given up their previous job, this seems like coercion.
I bet Stephen Hawking isn't really dead. I think he figured out how to get to that alternate reality and laughed, "See ya, suckers!" as he passed through the event horizon.
Some of us walk out of an unpleasant or coercive job on principle, whether we can afford it or not. I never let money stop me from doing it, but then I was single with no dependents and I could afford to live on saltines and peanut butter for a month or two until I got a new job. Twice I let sadistic employers fire me, and then I sued for unemployment and got it based on a "hostile work environment."
But then, the days when I was living on principle, the unemployment rate was very low, and I never had a problem getting a new job, and I didn't have Donald Trump's White House on my resume. I did have one job that was SO bad that I quit after 2 weeks and never put it on my resume at all. That was the time I lived on the saltines and peanut butter for 6 weeks.
