My personal view is that he doesn't really know what photoshop is, and he misunderstood the image he was given and nobody corrected him because they're cowards and because it served their purposes to let him believe this, and now someone has confronted him he is angry- not because it's clearly bullshit that the guy has MS-13 tattooed on his fingers but because he's being told he's wrong.
That's why he gets angry about this, and because he's angry he starts to insult his interviewer.
