When I first moved to Fl it was so hot n' humid, n dumb, we used to wonder at women wearing pantyhose, we'd say; "Jesus, you could bake bread in there". *shows self out*

When it starts to steam, it's scalded. Or, let it get a little foamy around the edges of the pot, which is another indication of scalding. Another test: you can just barely stick your finger in scalded milk. It will hurt, but it won't take the skin off like boiling milk does.

Also, sorry, but it's not the same to let it boil and then cool. Changes the chemical reaction.
